Vegan ‘fish’ cakes

  • Yields: 10 cakes (you'll want 3/4 per person for a main meal)

Ingredients

2 tbsp olive oil

2.5 sushi nori sheets

350g silken tofu

250g boiled potatoes

100g breadcrumbs (Plus more to cover)

1/2 onion

1.5 tsp mixed herbs

1 tsp minced garlic

1 tsp salt

Lemon wedges

Directions

1Boil the potatoes

2Blend the nori sheets into a powder

3Transfer the cooked potato and nori powder into a bowl and add all the other ingredients

4Mix into a dough

5Form into 10 flat patties and cover in breadcrumbs

6Fry in 2 tbsp oil for a few minutes until golden

7Serve with lemon wedges, salad and a sauce of your choice. (I use garlic cashew cream or liquid gold)
