Great little lunch snack

Ingredients

Yields
  • 2tbspOlive oil
  • 2.5Sushi nori sheets
  • 350gSilken tofu
  • 250gBoiled potatoes
  • 100gBreadcrumbs (Plus more to cover)
  • 0.5 Onion
  • 1.5tspMixed herbs
  • 1tspMinced garlic
  • 1tspSalt
  • Lemon wedges

Instructions

    Boil the potatoes

    Blend the nori sheets into a powder

  3. 3

    Transfer the cooked potato and nori powder into a bowl and add all the other ingredients

  4. 4

    Mix into a dough

  5. 5

    Form into 10 flat patties and cover in breadcrumbs

  6. 6

    Fry in 2 tbsp oil for a few minutes until golden

  7. 7

    Serve with lemon wedges, salad and a sauce of your choice. (I use garlic cashew cream or liquid gold)
