Mega Bean Chilli

This is amazing with rice, in a burrito or with a baked potato!

  • Yields: 4 people


2 Tbsp Olive oil

1 Onion

2 Garlic cloves

1 Tsp Oregano

1 Tsp Cumin

2 Tsp Smoked Paprika

1 Tsp Chilli powder

1 Tin black beans

1 Tin Kidney beans

1 Tin cannellini beans

1 Tin chopped tomatoes

2 Tbsp Tomato puree

300ml Vegetable stock

Juice of 1/2 lime

Cashew sour cream to serve


1Heat the oil and fry the onion for about 10 mins

2Add the garlic and cook for 5 minutes

3Add the oregano, cumin, paprika and chilli powder

4Add the beans, tomatoes, tom puree and stock

5Cook for 30 minutes

6Stir in the lime juice and season

7If you want a little more heat add a chopped red chilli

Don't forget the sour cream!

Serve with lots of Jen'sĀ guacamole!!
