Blueberry Muffins

2 cups flour

1 cup light brown sugar

1/2 tsp salt

1 tbsp baking powder

1 cup almond milk

1/2 cup oil

1 tsp vanilla extract

150g blueberries (frozen or fresh) - Can use raspberries too


1Pre heat cooker to 200c

2Mix flour, sugar, salt & baking powder together

3In a separate bowl mix milk, oil and vanilla extract

4Mix wet ingredients into dry and add the fruit

5Pour into muffin cases and cook for 18 minutes
