Fresh and zingy salad - great as a simple starter if you don't want anything too heavy

For the Salad
Chopped watermelon]
Tomatoes - qaurtered (I use yellow ones)
Fresh coriander - roughly chopped
Fresh mint - finely chopped
Green chillies - finely sliced
For the Dressing
1 tbsp Yuzu juice
1 tbsp Olive oil
1 tsp Rice wine vinegar
Squeeze of lemon
salt and pepper to taste

Combine ingredients for the dressing and season to taste

Pour dressing on salad - voila!
