Tofu, Black Bean & Spinach Scramble

Great hearty breakfast scramble. Lovely served on toast with baked beans!

Ingredients

Yields
  • 300g silken tofu or firm tofu (both are fine) (chopped into pieces and drained)
  • 1tin of black beans (drained & rinsed)
  • 1large handful of spinach
  • 1/2 white onion (finely chopped)
  • 1clove garlic, crushed
  • 3tbspolive oil
  • 1tspkala namak (salt)
  • 1tspcumin
  • 1/2 tsp turmeric
  • 1tbspchipotle paste
  • 2tbspnooch

Instructions

    Heat 2 tbsp oil in a non stick frying pan

    Fry the onion until soft

  3. 3

    Add the garlic, cumin and turmeric, fry for one minute

  4. 4

    Add the remaining oil

  5. 5

    Add the tofu and fry for 5 - 10 minutes

  6. 6

    Add the black beans, spinach and chipotle paste

  7. 7

    Heat through for a few minutes

  8. 8

    Sprinkle over the nooch and mix until melted

  9. 9

    Add the salt to taste and serve
