
Tofu, Black Bean & Spinach Scramble
Great hearty breakfast scramble. Lovely served on toast with baked beans!
Ingredients
Yields
- 300g silken tofu or firm tofu (both are fine) (chopped into pieces and drained)
- 1tin of black beans (drained & rinsed)
- 1large handful of spinach
- 1/2 white onion (finely chopped)
- 1clove garlic, crushed
- 3tbspolive oil
- 1tspkala namak (salt)
- 1tspcumin
- 1/2 tsp turmeric
- 1tbspchipotle paste
- 2tbspnooch
Instructions

Heat 2 tbsp oil in a non stick frying pan

Fry the onion until soft
- 3
Add the garlic, cumin and turmeric, fry for one minute
- 4
Add the remaining oil

Add the tofu and fry for 5 - 10 minutes

Add the black beans, spinach and chipotle paste

Heat through for a few minutes

Sprinkle over the nooch and mix until melted

Add the salt to taste and serve
