Tikka Smoked Tofu Skewers with Apple Slaw

For tikka masala paste
 2 Cloves garlic
 1 Large piece fresh ginger
 1 tsp Cayenne pepper
 1 tbsp Smoked paprika
 2 tbsp Garam masala
 1 tsp Cumin seeds
 1 tsp Coriander seeds
 1 tsp Salt
 2 tbsp Neutral oil
 2 tbsp Tomato puree
 2 Fresh red chilies
 a handful coriander
For Skewers
 225 g Firm smoked tofu
For tikka sauce
 1 tbsp Tikka paste
 120 g Unsweetened coconut yoghurt
 3 Cloves garlic, chopped
 ½ lime, juiced
 pinch salt
For Slaw
 200 g Red cabbage, finely chopped
 1 Apple, grated
 60 g Unsweetened coconut yoghurt
 ½ Lime, juiced
 Handful coriander, chopped
 pinch salt
Serve with rice (adding 1/2 tsp turmeric and spinach to cooked rice works well!)

First make the tikka paste by blending all ingredients (Leftover paste can be frozen)

Pre-heat oven to 200 degrees

Chop tofu into 16 squares and press with kitchen towel to remove excess water

Fry tofu in 1tbsp oil until browned (around 10 minutes)

Make tikka sauce by combining all ingredients (add more yoghurt for a milder sauce or more paste for spicier)

Skewer tofu pieces and top with the tikka sauce - cook in oven for 8 minutes

Meanwhile combine slaw ingredients and prepare rice.
