Thai chickpea burgers with pak choi

 240 g Tinned chickpeas
 2 Limes (juiced)
 1 Red chilli
 2 Pak choi
 2 tbsp Chickpea flour
 4 tbsp Maple syrup
 2 tbsp Red Thai curry paste
 4 Spring onions
 Neutral oil
 Sesame oil

Finely chop the red chilli and finely slice the spring onions

Trim the pak choi and slice length ways

Drain the chickpeas and mash in a bowl

Stir in the curry paste, flour and spring onions

Season with salt and make into 6 burgers

Heat the maple syrup, red chilli and lime juice for 5 minutes until thickened and syrupy

Heat oil and fry the burgers for 3 minutes on each side

Remove and keep warm

Fry the pak choi in a little sesame oil for 2 minutes on each side
