Spiced Roasted Chickpeas

This is a great snack, perfect to nibble on when waiting for dinner with a glass of wine! Adjust the spice to taste.

 425g tin chickpeas
 1/2 tsp sea salt
 2 tbsp olive oil
 1tsp maple syrup
 1 1/2 tsp finely chopped fresh rosemary
 2 tsp garam masala
 1tsp cayenne pepper

Preheat the oven to 210 degrees C/ 190 degrees C fan / 425 degrees F / Gas Mark 7

Drain the chickpeas and rinse thoroughly.

Transfer to a clean tea towel and pat dry - this will help them crisp up in the oven.

In a bowl combine the chickpeas with the salt, oil and maple syrup making sure they are evenly coated.

Spread the chickpeas out on a baking tray, and roast in the oven for about 18-20 mins, until crisp and golden.

Remove from the oven and mix with the garam masala, cayenne pepper and rosemary until even coated.

Leave to cool before serving.
