A good plant based carb loading dish!

Ingredients

Yields
  • 1Pack of vegan sausages (THIS brand works well)
  • 1Red onion
  • 2Garlic cloves
  • 1tspSmoked Paprika
  • 1/2tspMixed Italian herbs
  • 1Sachet balsamic sun-dried tomato paste
  • 1tspChill flakes (alter to spice taste)
  • 250mlOat cream (Oatly works well)
  • 1tspVeg stock
  • 1TbspNutritional yeast
  • 1Pack of tortiglioni (or similar pasta)
  • 1Handful of basil

Instructions

    Slice the onion finely and fry in oil with a pinch of salt for about 3-4mins

    Add 1 tsp of sugar and fry for another 3-4mins until the onion starts to caramelise. Once cooked remove from pan and set aside.

    Add the sausages to the pan with some olive oil, breaking up into bite sized pieces. Cook for 5-6mins before adding back in the onion and garlic, peel and crushed.

    Add the smoked paprika, herbs, sun-dried tomato paste and chilli flakes to the pan. Fry for 1-2mins.

    Add the cream, veg stock and 100ml of boiling water and nutritional yeast. Bring to a low simmer.

    Cook the pasta in salted water for 10-12mins

    Once cooked, drain the pasta and add to the sauce. Season to taste.

    Serve with the roughly chopped basil.
