Smashed Cucumber

Explosion of flavour - side dish or snack!

 1 Cucumber
 1 tsp Fine Salt
 2 tbsp Chiu Chao Chilli Oil
 2 tbsp Soy Sauce
 2 tbsp Rice Vinegar
 3 Garlic cloves, crushed
 1.50 tsp Sugar
 2 tsp Sesame Oil
 Sesame seeds to serve

Chop cucumber in half lengthways and flesh-side down, smash cucumber with flat side of knife or rolling pin a few times until it starts splitting slightly (you still want it in one piece!).

Remove seeds with a spoon then chop cucumber diagonally into 1/4 inch slices, add to colander and sprinkle over salt. Leave for 30 mins over sink while excess water drains out of cucumbers

Add garlic to vinegar in bowl and leave for 10 mins and then add the remainder of the ingredients.

Toss the cucumber in the sauce and serve with sesame seeds.
