Keema Rice

Easy, spicy one-pot rice dinner

Yields1 Serving

 1 Onion, sliced
 2 Garlic cloves, chopped
 2 Carrots, cubed
 32 g Tomato puree
 1 tbsp Curry powder
 15 g Ginger, chopped
 11 g Stock mix
 200 g Vegan mince
 130 g Basmati rice
 1 Lime
 Coriander to serve

Heat oil in pan then add onion with pinch of salt and sugar - cook for 5 mins

Add mince and cook for further 5 mince, breaking down as you go

Add carrots, ginger and garlic and cook for 1 min

Add stock, tomato puree and curry powder - mix well then add rice to the pan

Add 450ml cold water and bring to boil. Once boiling, turn heat to low and simmer covered for 15-20 mins until water absorbed. Stir occasionally to ensure rice doesn't stick to pan and the rice cooks evenly

Once all rice has absorbed, add coriander and juice from 1/2 lime

Serve with remaining lime in wedges and sprinkle of cori
