Granola

Great, wholesome and tasty brekkie option adapted from the awesome School Night Vegan recipe.

Yields1 Serving

 255 g old fashioned (large) oats
 35 g spelt flour
 ½ tsp ground cinnamon
 ¼ tsp salt flakes
  tsp ground cardamom
  tsp ground nutmeg
 100 g pecans
 100 g almonds (I use a mix of whole and flaked)
 50 g mixed seeds
 20 g desicated coconut
 155 ml maple syrup (can sub some molasses for maple here)
 75 g melted coconut oil
 ¼ tsp vanilla paste

Preheat over to 150C and line 2 trays with greaseproof paper

Combine oats, nut, seeds, coconut, spices and salt in a large bowl

Mix the remaining wet ingredients and add to the oat mix

Spread the mix onto the covered trays. Cook for 15 mins, stir the granola and add for a further 15 minutes

Allow to cool before serving with yoghurt or milk! Store in an airtight container.
