This is a very quick and simple but tasty after school meal or lazy dinner!

Ingredients

Yields
  • Good drizzle of olive oil
  • 2carrots, grated
  • 1yellow bell pepper, chopped
  • 5spring onions minced
  • 3to 4 tablespoons organic Tamari (or other soy sauce)
  • 3cupsfrozen or tinned edamames, defrosted if applicable
  • Cooked long-grain brown rice (quantity as desired)

Instructions

    Heat the oil in a large wok or skillet over medium-high heat

    Add carrots, bell pepper and spring onions, and stir-fry until just tender, about 2 minutes

  3. 3

    Add a little veg broth or water as needed

  4. 4

    Add Tamari, defrosted edamames and cooked rice, and stir-fry until combined and heated through, about 5 minutes
