
Edamame Fried Rice
This is a very quick and simple but tasty after school meal or lazy dinner!
Ingredients
Yields
- Good drizzle of olive oil
- 2carrots, grated
- 1yellow bell pepper, chopped
- 5spring onions minced
- 3to 4 tablespoons organic Tamari (or other soy sauce)
- 3cupsfrozen or tinned edamames, defrosted if applicable
- Cooked long-grain brown rice (quantity as desired)
Instructions
- 1Heat the oil in a large wok or skillet over medium-high heat 
- 2Add carrots, bell pepper and spring onions, and stir-fry until just tender, about 2 minutes 
- 3Add a little veg broth or water as needed 
- 4Add Tamari, defrosted edamames and cooked rice, and stir-fry until combined and heated through, about 5 minutes
