Curry All Sorts

Quick, lazy and very easy curry! You can pretty much always make this from the cupboard and use any veg and legumes etc you have!

 1 tbsp Olive oil
 1 Onion
 2 Garlic cloves (crushed)
 6 Potatoes (diced)
 1.50 tbsp Curry powder
 2 tsp Turmeric
 1 Cauliflower (chopped up)
 1 Tin coconut milk
 1 Tin chopped tomatoes
 150 g Peas
 1 Tin lentils
 Chopped coriander

Fry chopped onion & garlic in oil until soft.

Add potatoes, curry powder, turmeric and cauliflower.

Fry for a bit.

Add coconut milk & toms

Simmer for 30 minutes.

Add some peas and the lentils.

Cook for another 10-15 mins.

Throw in chopped coriander.
