Curried sausage tray bake

German-style tray bake

 1 Red onion (1/2 cut into wedges 1/2 finely chopped)
 100 g Kale (Shredded)
 2 tbsp Tomato puree
 2 tbsp tomato ketchup
 2 tsp Smoked paprika
 1 tbsp Curry powder
 2 Garlic cloves (Crushed)
 1 Sweet potato (Chopped into bits sized pieces)
 2 White potatoes (Chopped into bits sized pieces)
 1 tbsp Henderson's relish
 6 Vegan sausages
 200 ml Boiling water

Preheat the oven to 200 degrees.

Add the sausages, potatoes and onion wedges to a baking tray with a drizzle of oil and salt and pepper.

Cook for 30 minutes (or until potatoes are cooked).

Heat a pan with a drizzle of oil and add the chopped onion until softened.

Add the garlic, curry powder & smoked paprika and cook for 1 minute.

Add the tomato puree, Henderson's relish, tomato ketchup and the boiling water and give everything a good mix until gravy consistency. Set aside.

Add a drizzle of oil to the kale and sprinkle over the sausages. Cook for a further 4 minutes until the kale is crispy.

Serve the bake was the curried tomato sauce drizzled over the top.
