Apple and Apricot Crumble

Crumble is a real comfort pudding and is super quick and easy to make. You can use any filling you like, some ideas below.

Filling
 3 apples sliced thinly
 2oz dried apricots cut into quarters
 1 tbsp sugar
 4 tbsp water
 1tsp cinnamon
Topping
 3oz dairy free margarine
 6oz flour
 3oz sugar
 Handful of ground almonds
 2tsp cinnamon

Put the apples and apricots into an ovenproof dish.

Sprinkle with the sugar water and cinnamon.

Make the crumble by rubbing the margarine into the flour and then mixing in the sugar, ground almonds and cinnamon. It should look a bit like breadcrumbs.

Pile the crumble on top of the apple and apricot mixture.

Bake in a moderately hot oven for 45 minutes to an hour depending on your oven. If it seems to be browning too quickly cover it with foil for the last 10-15mins.

Serve hot with vegan ice-cream.

Experiment with different combinations of fruit - it's a great pudding to use up fruit you may have left over. Some ideas; apples and pears, plums, rhubarb and ginger, peaches and raspberries. Add sunflower seeds or chopped nuts into the topping for crunch.
