Tofu, Black Bean & Spinach Scramble

Great hearty breakfast scramble. Lovely served on toast with baked beans!

  • Cook: 15 mins
  • Yields: Serves 2 on it's own with toast or 4 as part of a bigger breakfast

Ingredients

300g silken tofu or firm tofu (both are fine) (chopped into pieces and drained)

1 tin of black beans (drained & rinsed)

1 large handful of spinach

1/2 white onion (finely chopped)

1 clove garlic, crushed

3 tbsp olive oil

1 tsp kala namak (salt)

1 tsp cumin

1/2 tsp turmeric

1 tbsp chipotle paste

2 tbsp nooch

Directions

1Heat 2 tbsp oil in a non stick frying pan

2Fry the onion until soft

3Add the garlic, cumin and turmeric, fry for one minute

4Add the remaining oil

5Add the tofu and fry for 5 - 10 minutes

6Add the black beans, spinach and chipotle paste

7Heat through for a few minutes

8Sprinkle over the nooch and mix until melted

9Add the salt to taste and serve
