  • Yields: 2 main servings

For tikka masala paste

2 cloves garlic

1 large piece fresh ginger

1 tsp cayenne

1 tbsp smoked paprika

2 tbsp garam masala

1 tsp cumin seeds

1 tsp coriander seeds

1 tsp salt

2 tbsp neutral oil

2 tbsp tomato puree

2 fresh red chilies

a handful coriander

For Skewers

225g firm smoked tofu

For tikka sauce

1 heaped tbsp tikka paste

60g unsweetened coconut yoghurt

3 cloves garlic, chopped

1/2 lime, juiced

pinch salt

For Slaw

200g red cabbage, finely chopped

1 med-large apple, grated

60g unsweetened coconut yoghurt

1/2 lime, juiced

Handful coriander, chopped

pinch salt

Serve with rice (adding 1/2 tsp turmeric and spinach to cooked rice works well!)

1First make the tikka paste by blending all ingredients (Leftover paste can be frozen)

2Pre-heat oven to 200 degrees

3Chop tofu into 16 squares and press with kitchen towel to remove excess water

4Fry tofu in 1tbsp oil until browned (around 10 minutes)

5Make tikka sauce by combining all ingredients (add more yoghurt for a milder sauce or more paste for spicier)

6Skewer tofu pieces and top with the tikka sauce - cook in oven for 8 minutes

7Meanwhile combine slaw ingredients and prepare rice.

8Serve and enjoy!
