Satay Spiralized Vegetable Stir Fry Rice Bowl

3 courgettes (spiralized into noodles)

2 handfuls of chopped cabbage or kale (more if you want more veggies)

1 shallot

1 tbsp sesame oil

2 -3 tbsp tahini

1/2 to 1 tsp red chili flakes

2 tbsp tamari or soy sauce

1 tsp agave or maple syrup

1 tsp garlic (minced)

1/4 tsp five spice asian seasoning

black pepper to taste



1Spiralize your courgette. Clean and dry. Chop your cabbage and shallot.

2Cook rice separately as you normally do

3Heat a wok or skillet to medium high or high and add in your tahini (make sure it's smooth and melted or creamy), sesame oil, tamari, garlic, and chilli flakes.

4Mix all together.

5Toss in your veggies and remaining ingredients and seasoning & spices.

6Stir fry all together for a few minutes until veggies are cooked and coated but not soggy.

7Remove and garnish with more chilli flakes and black pepper if desired.

This is a great quick midweek meal. It's quite salty so be careful with extra seasoning. I love this!
