You can add pretty much anything you want to these

2 big handfuls grated vegan cheese (or melty cheese sauce - see recipe)

5 spring onions, chopped

2 handfuls fresh coriander, chopped up

1 red pepper, chopped up small

2 red chillies, chopped up small

Black beans (slightly smashed)

Tortilla wraps


1Mix all the ingredients together in a bowl (except the wraps)

2Place one wrap in a dry frying pan

3Spread the mixture out on one wrap until covered and then top with another wrap

4Fry until melted and starting the brown and then flip over and repeat

5Slide onto a place and chop into triangles

6Serve with guac & vegan sour cream
