Potato Salad

Quick and tasty potato salad - perfect for a summer BBQ!

Ingredients

500g new/salad potatoes, cleaned and halved/quartered depending on size

3 tbsp vegan mayo (search for recipe in files or store-bought)

1/2 red onion, finely chopped

1 tsp lemon juice

1tsp apple cider vinegar

2 tbsp freshly chopped chives (plus extra to garnish)

Salt and pepper, to taste

Directions

1Boil potatoes in lightly salted water for 15 minutes, drain and allow to cool down

2While potatoes cooling, combine remaining ingredients in a large bowl, check for taste, adjust as necessary and finally add potatoes.

3Sprinkle some extra chives or chive flowers to serve
