Mock ‘duck’ wraps

400g tin jackfruit

1 tsp sesame oil

1/2 tsp Chinese five spice

5 tbsp hoisin sauce

2 garlic cloves (crushed)

2cm piece ginger grated

1/2 tsp Szechuan peppercorns (crushed)

2 tbsp vegan mayo

flour tortillas

1/2 cucumber (finely sliced)

2 spring onions (finely sliced)


1Drain the jackfruit and squeeze out all excess water with your hands

2Shed in a mixing bowl

3In another small bowl mix together the oil, five spice, 3 tbsp hoisin sauce, garlic, ginger and peppercorns

4Whisk well to combine and then pour over the jackfruit

5Mix well and leave to marinate for at leat an hour

6Add a splash of oil to a frying pan and fry over a high heat for 5 minutes

7Lower the heat and continue to fry for 15 minutes - the jackfruit should be dry and crispy on the edges

8Combine the remaining 2 tbsp hoisin sauce with the mayo

9Assemble your wraps with some sauce, mock 'duck', cucumber and spring onion
