Minted peas

Tasty and very simple alternative to just peas! Great as a side with tofish or salt and pepper tofu.

 1 tsp rapeseed oil
 1 large shallot (2-3 smaller) finely chopped
 1-2 cloves of garlic (to taste) finely chopped or minced
 250g frozen garden peas (defrosted and lightly crushed with fork or masher)
 1 small bunch of fresh mint (finely chopped)
 salt & pepper

Add shallot to oil in a pan and cook for a few minutes

Add garlic for another few minutes

Add peas for another few minutes until heated through

Add mint and season
