Fudgy Brownies

Extremely decadent brownies amazing by themselves or with a scoop of ice cream - who said vegan food had to be healthy?!

  • Yields: 12 good sized brownies


250g plain white flour

1 tsp baking powder

pinch salt

1 banana, peeled and mashed

230g golden caster sugar

1 tbsp vanilla essence

140g good quality dark chocolate (at least 70% cocoa solids)

4 tbsp vegan margarine (plus extra for greasing)

1 tbsp agave nectar

60g dark choc chips

120g walnuts chopped


1Preheat oven to 180 degrees celsius and grease 20cm baking tray then line

2Sift flour, baking powder and salt into large bowl

3In another bowl, combine mashed banana, sugar and vanilla essence

4Melt chocolate (not choc chips), marg and agave in bowl over boiling water until smooth then pour into banana mixture and combine

5Pour banana choc mixture into the flour and fold til all combined (don't over-stir)

6Fold in choc chips and walnuts

7Spoon mixture into the lined tin and bake in over for 25 minutes

8Allow to cool completely before cutting into pieces
