Edamame Fried Rice

This is a very quick and simple but tasty after school meal or lazy dinner!

 Good drizzle of olive oil
 2 carrots, grated
 1 yellow bell pepper, chopped
 5 spring onions minced
 3 to 4 tablespoons organic Tamari (or other soy sauce)
 3 cups frozen or tinned edamames, defrosted if applicable
 Cooked long-grain brown rice (quantity as desired)

Heat the oil in a large wok or skillet over medium-high heat

Add carrots, bell pepper and spring onions, and stir-fry until just tender, about 2 minutes

Add a little veg broth or water as needed

Add Tamari, defrosted edamames and cooked rice, and stir-fry until combined and heated through, about 5 minutes
