Creamy Mushroom Soup

Delicious and super easy soup

  • Prep: 5 mins
  • Cook: 35 mins
  • Yields: 2 large bowls, 3 medium


1/2 tbsp oil

1 onion

5 cloves garlic

450g mushrooms (I used button and chestnut)

1/2 tsp dried oregano

1/2 tsp dried basil

1/2 tsp dried thyme

400ml veg stock

1 cup coconut milk (other plant based milk would work fine)

1/2 tbsp liquid aminos

salt and pepper to taste


1Add onion and garlic to oil and sweat

2Add mushrooms, mix and cook for around 10 mins

3Add herbs and cook for 10 more mins

4Add stock. liquid aminos and coconut milk

5Add salt and pepper to taste

6Cook for 15 more mins adding a little more stock if necessary

7Blend the mixture til you have a smooth soup

8Check again for seasoning and serve
