Courgette Noodles with Sun-Dried Tomato Sauce & Sauteed Mushrooms

This is very quick, tasty and fresh. You don't have the heat the sauce and courgette if you want it raw!

  • Yields: Serves 2


5 courgettes

1 tbsp olive oil

200g mushrooms (sliced)

1 crushed garlic clove

1 tsp chilli flakes

3 tbsp pine nuts

For the sauce

60g sun-dried tomatoes

3 tbsp olive oil

4 plum tomatoes (chopped)

1 handful fresh basil

1/2 clove garlic

1 tsp chilli flakes

3 tbsp tomato puree

Salt & Pepper


1Spiralise the courgettes and set aside

2Add all sauce ingredients into a blender and blitz until smooth, season to taste. Set aside

3Toast the pine nuts, set aside

4Heat 1 tbsp oil in a pan and fry the garlic and mushrooms for 5-8 minutes

5Add the sauce to a frying pan and heat gently for 2 minutes

6Add the courgette and mix and heat through

7Assemble the courgette garnished with mushrooms and pine nuts

8Serve with parmesan style cheese
