
Tan Tan Ramen
Tasty and quick ramen based on Veganezer recipe.
Ingredients

- 1Pack tofu, pressed
- 1tbspMirin
- 1tbspginger, chopped
- 3garlic cloves
- 1tbspSpicy bean sauce
- 2tbspSoy sauce
- 2tbspChinese sesame paste (Tahini can be used as a sub if necessary)
- 1tspRice vinegar
- 0.5tspSugar
- 1tbspChilli oil
- 400mlSoy milk (unsweetened)
- 400mlStock
- 1Pack shiitake mushrooms
- 1Pack Boy choy
- 3Spring onions, chopped
- 2Packs Ramen noodles
- Sprinkle sesame seeds

Mix together tofu marinade and tear tofu in. Varied sizes of tofu will make for varied crunch!

Cook tofu in oven or air fryer, shaking every 5 mins to ensure evenly cooked. Smaller pieces of tofu will be quite crispy, larger pieces softer in middle

Combine soup base and add to pan on low heat with milk and stock

Chop shiitakes and add to large separate pan on low heat. After 5 mins chop boy choy lengthway into bite sized pieces and add to mushrooms. Cook until wilted but still bright breen.

Cook noodles to pack instructions and add to large ramen bowl. Add soup, and then tofu and the additional toppings.
