
Satay Spiralized Vegetable Stir Fry Rice Bowl
I love this so much, and it's great if you're trying to cut the carbs a bit as you can have it without rice and it's still really satisfying.
Ingredients
Yields
- 3Courgettes (spiralized into noodles)
- 2Handfuls of chopped cabbage or kale (more if you want more veggies)
- 1Shallot
- 1tbspSesame oil
- 3tbspTahini
- 1tspRed chili flakes
- 2tbspTamari or soy sauce
- 1tspAgave or maple syrup
- 1tspGarlic (minced)
- 0.25 tsp Five spice asian seasoning
- black pepper to taste
- Rice
Instructions

Spiralize your courgette. Clean and dry. Chop your cabbage and shallot.

Cook rice separately as you normally do

Heat a wok or skillet to medium high or high and add in your tahini (make sure it's smooth and melted or creamy), sesame oil, tamari, garlic, and chilli flakes.

Mix all together.

Toss in your veggies and remaining ingredients and seasoning & spices.

Stir fry all together for a few minutes until veggies are cooked and coated but not soggy.

Remove and garnish with more chilli flakes and black pepper if desired.
