
Potato Salad
Quick and tasty potato salad - perfect for a summer BBQ!
Ingredients
Yields
- 500g new/salad potatoes, cleaned and halved/quartered depending on size
- 3tbspvegan mayo (search for recipe in files or store-bought)
- 1/2 red onion, finely chopped
- 1tsplemon juice
- 1tsp apple cider vinegar
- 2tbspfreshly chopped chives (plus extra to garnish)
- Salt and pepper, to taste

Boil potatoes in lightly salted water for 15 minutes, drain and allow to cool down

While potatoes cooling, combine remaining ingredients in a large bowl, check for taste, adjust as necessary and finally add potatoes.

Sprinkle some extra chives or chive flowers to serve
