
MIXED VEGETABLES FAJITAS
Quick and simple weekday fajitas!
Ingredients
- 4Peppers (red, yellow, orange, green, whatever go crazy!)
- 1Medium Onion
- 230g Mushrooms
- 3Cloves Garlic
- 2TablespoonsOlive Oil
- 1¼ teaspoons Chilli Powder
- ¾ teaspoons Cumin
- ½ teaspoon Smoked Paprika
- ¾ teaspoon Salt
- 8Corn Tortillas (Ones that go in the microwave are easiest)
- Vegan Sour Cream (See http://beta.veganeat.co.uk/recipe/cashew-cream-sour-cream/)
- Lime wedges
- Cilantro (Coriander)
- Avocado
- Refried Beans
- Salsa
- Hot sauce
Instructions

Prep (Always good to be prepared)

Get those sides ready to go, you don't want to be caught out!

Slice the onions nice and thin
- 4
Slice the mushrooms
- 5
Cut the peppers into sticks
- 6
Mince the garlic
- 7
Measure out the spices and put in a prep dish
- 8
Let's do this

Heat the oil in a nice heavy base frying pan over a medium heat

Toss in the peppers, onions, chilli powder, cumin, smoked paprika, and salt.

Cook until the veg begins to soften (5-8 mins should do it)

Add in the mushrooms and garlic and continue to cook for another 5-7 minutes until everything is just cooked.

Pop the tortilla wraps in the microwave as per pack instructions (usually less than a minute)

When you are nearly ready to go, crank the heat up for a minute to give it a sizzle!

Bring the pan to the table for that added flair, just don't burn your table or more importantly the person you are cooking for!
