Great, wholesome and tasty brekkie option adapted from the awesome School Night Vegan recipe.

Ingredients

Yields
  • 255gold fashioned (large) oats
  • 35gspelt flour
  • 0.5 tsp ground cinnamon
  • 0.25 tsp salt flakes
  • 0.125 tsp ground cardamom
  • 0.125 tsp ground nutmeg
  • 100gpecans
  • 100galmonds (I use a mix of whole and flaked)
  • 50gmixed seeds
  • 20gdesicated coconut
  • 155mlmaple syrup (can sub some molasses for maple here)
  • 75gmelted coconut oil
  • 0.25 tsp vanilla paste

Instructions

    Preheat over to 150C and line 2 trays with greaseproof paper

    Combine oats, nut, seeds, coconut, spices and salt in a large bowl

    Mix the remaining wet ingredients and add to the oat mix

  4. 4

    Spread the mix onto the covered trays. Cook for 15 mins, stir the granola and add for a further 15 minutes

    Allow to cool before serving with yoghurt or milk! Store in an airtight container.
