
Creamy Mushroom Soup
Delicious and super easy soup
Ingredients
Yields
- 1/2 tbsp oil
- 1onion
- 5cloves garlic
- 450g mushrooms (I used button and chestnut)
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp dried thyme
- 400ml veg stock
- 1cupcoconut milk (other plant based milk would work fine)
- 1/2 tbsp liquid aminos
- salt and pepper to taste
Instructions

Add onion and garlic to oil and sweat
- 2
Add mushrooms, mix and cook for around 10 mins
- 3
Add herbs and cook for 10 more mins
- 4
Add stock. liquid aminos and coconut milk
- 5
Add salt and pepper to taste
- 6
Cook for 15 more mins adding a little more stock if necessary

Blend the mixture til you have a smooth soup
- 8
Check again for seasoning and serve
