Very simple chia pudding...a pudding that it is acceptable to eat for breakfast - hooray!

Ingredients

Yields
  • 1/4 cup chia seeds
  • 1.25 cup of plant based milk (I use almond)
  • 1/2 tbsp maple syrup (to taste) and/or 1/4 tsp vanilla essence
  • Optional toppings: coconut yoghurt, fruit, seeds, choc drops, protein powder etc (I used coconut milk, mango and pomegranate seeds)

Instructions

    Whisk chia seeds and milk

    Leave for 5 mins

  3. 3

    Whisk again

  4. 4

    Add maple syrup/vanilla essence

  5. 5

    Leave in fridge for 3 hours or overnight

  6. 6

    Take out of fridge, re-whisk (if too runny, add more chia and refrigerate, if too think add a little more milk)

  7. 7

    Separate into bowls as required, add toppings and eat!

  8. 8

    Will keep in fridge for a few days
