
Chia pudding
Very simple chia pudding...a pudding that it is acceptable to eat for breakfast - hooray!
Ingredients
Yields
- 1/4 cup chia seeds
- 1.25 cup of plant based milk (I use almond)
- 1/2 tbsp maple syrup (to taste) and/or 1/4 tsp vanilla essence
- Optional toppings: coconut yoghurt, fruit, seeds, choc drops, protein powder etc (I used coconut milk, mango and pomegranate seeds)

Whisk chia seeds and milk

Leave for 5 mins

Whisk again

Add maple syrup/vanilla essence
- 5
Leave in fridge for 3 hours or overnight
- 6
Take out of fridge, re-whisk (if too runny, add more chia and refrigerate, if too think add a little more milk)

Separate into bowls as required, add toppings and eat!

Will keep in fridge for a few days
