- 1cupLight brown sugar (215g)
- 0.5 tsp Salt
- 1tbspBaking powder
- 1cupAlmond milk (235ml)
- 0.5 cup Oil (120ml)
- 1tspVanilla extract
- 150gBlueberries (frozen or fresh) - Can use raspberries too

Pre heat cooker to 200c

Mix flour, sugar, salt & baking powder together

In a separate bowl mix milk, oil and vanilla extract

Mix wet ingredients into dry and add the fruit

Pour into muffin cases and cook for 18 minutes
