Chia pudding

Very simple chia pudding...a pudding that it is acceptable to eat for breakfast - hooray!

Prep Time7 minsCook Time3 hrsTotal Time3 hrs 7 mins

 1/4 cup chia seeds
 1&1/4 cup of plant based milk (I use almond)
 1/2 tbsp maple syrup (to taste) and/or 1/4 tsp vanilla essence
 Optional toppings: coconut yoghurt, fruit, seeds, choc drops, protein powder etc (I used coconut milk, mango and pomegranate seeds)

Whisk chia seeds and milk

Leave for 5 mins

Whisk again

Add maple syrup/vanilla essence

Leave in fridge for 3 hours or overnight

Take out of fridge, re-whisk (if too runny, add more chia and refrigerate, if too think add a little more milk)

Separate into bowls as required, add toppings and eat!

Will keep in fridge for a few days
