Mock ‘duck’ wraps

This is a great take away substitute!

 100 g Tin jackfruit
 ¼ tsp Sesame oil
  tsp Chinese five spice
 1 ¼ tbsp Hoisin sauce
 ½ Garlic cloves (crushed)
 ½ cm piece ginger grated
  tsp Szechuan peppercorns (crushed)
 ½ tbsp Vegan mayo
 flour tortillas
  Cucumber (finely sliced)
 ½ Spring onions (finely sliced)

Drain the jackfruit and squeeze out all excess water with your hands

Shed in a mixing bowl

In another small bowl mix together the oil, five spice, 3 tbsp hoisin sauce, garlic, ginger and peppercorns

Whisk well to combine and then pour over the jackfruit

Mix well and leave to marinate for at leat an hour

Add a splash of oil to a frying pan and fry over a high heat for 5 minutes

Lower the heat and continue to fry for 15 minutes - the jackfruit should be dry and crispy on the edges

Combine the remaining 2 tbsp hoisin sauce with the mayo

Assemble your wraps with some sauce, mock 'duck', cucumber and spring onion
