Chop the cauliflower into small chunks, add them to a microwavable bowl
Add the, butter, milk, mustard and salt & pepper
Microwave on full power for 4 minutes, stir and then another 4 minutes
Transfer to a blender and blitz until smooth, adding the nooch and seasoning to taste as you go.
You can mix up this recipe by adding lots of different flavours, sun-dried tomato paste, vegan pesto, herbs, spring onions, or curry power (in the microwave). Play around and see what you like!
