Gazpacho

Traditional Spanish cold soup

 2 kg Tomatoes, cored and halved
 2 Small cucumber (seeds removed)
 2 Green pepper (cored)
 1.00 Red onion
 4 Garlic cloves (peeled)
 6 tbsp Olive oil
 4 tbsp White wine vinegar
 2 tsp Fine sea salt
 1.00 tsp Black pepper
 Basil to garnish

Combine all ingredients together in a blender or food processor (except the basil). Puree for 1 minute, or until the soup reaches your desired consistency.

Taste and season with extra salt & pepper if needed.

Refrigerate in a sealed container for 3 to 4 hours, or until completely chilled.

Serve cold, topped with chopped tomatoes, basil and black pepper.
