2 tbsp Olive oil1 Onion2 Garlic cloves1 tsp Oregano1 tsp Cumin1 tsp Smoked Paprika1 tsp Chilli powder1 Tin black beans1 Tin Kidney beans1 Tin cannellini beans1 Tin chopped tomatoes2 tbsp Tomato puree300 ml Vegetable stock1 tbsp Lime juiceCashew sour cream to serve

Heat the oil and fry the onion for about 10 mins

Add the garlic and cook for 5 minutes

Add the oregano, cumin, paprika and chilli powder

Add the beans, tomatoes, tom puree and stock

Cook for 30 minutes

Stir in the lime juice and season

If you want a little more heat add a chopped red chilli
