Thai chickpea burgers with pak choi

240g tinned chickpeas

2 limes (juiced)

1 red chilli

2 pak choi

2 tbsp chickpea flour

4 tbsp maple syrup

2 tbsp red Thai curry paste

4 spring onions

Neutral oil

Sesame oil


1Finely chop the red chilli and finely slice the spring onions

2Trim the pak choi and slice length ways

3Drain the chickpeas and mash in a bowl

4Stir in the curry paste, flour and spring onions

5Season with salt and make into 6 burgers

6Heat the maple syrup, red chilli and lime juice for 5 minutes until thickened and syrupy

7Heat oil and fry the burgers for 3 minutes on each side

8Remove and keep warm

9Fry the pak choi in a little sesame oil for 2 minutes on each side
