This is the most basic, and yet the best, vegan bacon recipe I have found!
3 king oyster mushrooms
1 tbsp rapeseed oil
1 tsp sesame oil
3/4 tsp liquid smoke
1/2 tsp smoked paprika
1/4-1/2 tsp salt
1Pre-heat oven to 180 degrees C
2Mix marinade ingredients in large bowl
3Thinly slice mushrooms - there will be different sizes and thicknesses and that is fine - it adds to the end texture
4Add mushrooms to marinade and mix until there is a thin layer of marinade coating the mushrooms
5Lay out mushrooms on greaseproof papered tray and cook for around 15 minutes, check and turn mushrooms at around 7 mins
6When ready the smaller slices will be crispy and the larger slices chewy
