Jackfruit Burgers

250g tin jackfruit (Drained)

1 red onion

1 red chilli

2 cloves garlic

Handful coriander

4cm ginger

4 tbsp buckwheat flour (or plain white)

1 tsp neutral oil

1 tbsp sesame oil


1Dice the red onion, finely chop the garlic, red chilli and coriander leaves.

2Peel and grate the ginger

3Heat oil in a pan and cook the garlic, ginger, chilli and onion for 5 minutes until softened

4Add the jackfruit and cook for 2 minutes

5Pull the jackfruit apart with 2 forks and place in a bowl for 5 minutes to cool

6Stir in 3 tbsp flour and the chopped coriander

7Form the mix into two burgers and dust with the remaining flour

8Heat the sesame oil in a pan and fry the burgers for 4 minutes on each side until cooked through
