Jackfruit Burgers

Great quick mid week burgers

Yields2 Servings

 250 g Tin jackfruit (Drained)
 1 Red onion
 1 Red chilli
 2 Cloves garlic
 1 Handful coriander
 4 cm piece ginger
 4 tbsp Buckwheat flour (or plain white)
 1 tsp Neutral oil
 1 tbsp Sesame oil

Dice the red onion, finely chop the garlic, red chilli and coriander leaves.

Peel and grate the ginger

Heat oil in a pan and cook the garlic, ginger, chilli and onion for 5 minutes until softened

Add the jackfruit and cook for 2 minutes

Pull the jackfruit apart with 2 forks and place in a bowl for 5 minutes to cool

Stir in 3 tbsp flour and the chopped coriander

Form the mix into two burgers and dust with the remaining flour

Heat the sesame oil in a pan and fry the burgers for 4 minutes on each side until cooked through
